Quercetin is one of the best-known substances in the group of bioflavonoids. Bioflavonoids are a good source of antioxidants that protect against oxidative stress. Bioflavonoids are also called citrine, vitamin C2, flavones, flavonols and flavonones. The bioflavanoids always work together with vitamin C. They are water-soluble and have high stability during preparation. Quercetin is found naturally in, among other things, red wine, green tea, onions, apples and leafy vegetables.
