The herbal medicine man Lemon balm (melissa officinalis) works well as a healthy spice in cooking, as a tasty herbal tea or as an aromatic scent in a potpourri. Lemon meliss has a fresh citrus taste. Important: Store dry and dark. Let 1-2 teaspoons steep in a cup of boiling water for 5-10 minutes. Lemon balm is an old spice plant that is common in cultivation. It was already used in antiquity as a spice and medicinal plant. Lemon balm is a perennial, hairy, lemon-scented herb that can grow up to eight centimeters tall. The species originally belongs to the eastern Mediterranean area. The first record of finds that have gone wild is from Ystad, Skåne and was published in 1843 (Hylander 1971). Shots of lemon balm are used, among other things, as a seasoning for salad and fish and game dishes, but can also be used for tea or to make liqueur. The scent of the leaves is believed to attract bees and it is believed that lemon balm leaves can attract bee swarms into empty hives (Mabberley 1997).
